Cassia Cinnamon Cassia cinnamon, scientifically known as Cinnamomum cassia or Cinnamomum aromaticum, is a type of cinnamon derived from the inner bark of evergreen trees native to southern China and parts of Southeast Asia. It is darker, thicker, and has a more robust, spicy flavor compared to its counterpart, Ceylon cinnamon.
